243. Salad Monday

This week’s Salad Monday is brought to you by brussels sprouts. Yes, technically, this is more of a rice bowl. But, it is a bowl of “greens” so I’ll count it. In fact, it’s tossed with a low-calorie Balsamic Balsamic Vinaigrette (which is technically a salad dressing) so I think I can officially call it a warm salad. Hurray! Want the recipe? Here ya go:


*Note to self: Just found out there’s an “s” at the end of the word “brussels.” What else don’t I know about the spelling of vegetables? Is “raspberry” really not spelled with a “p”? 241. Salad Monday

Salad Monday

This week’s Salad Monday is brought to you by Finally It’s Spring. That’s right folks, today was the first time I was able to get a salad “to go” at my local corner store and head straight to Central Park because it wasn’t 40 degrees outside. There was no snow. There were no puddles of slush. There wasn’t even a street vendor selling scarves and earmuffs on the sidewalk. I was so happy that I eagerly sat in the sun, sans sunscreen, and immediately thought of the popsicle I was going to buy (let’s get real, when I say “popsicle” I really mean the mojito I was gonna buy from the shady dude walking around with a plastic bag filled with ice). I plan on being on a first name basis with that guy by the time spring rolls into summer. That’s my goal, at least.

*Note to self: Don’t ever wear a see-through bra and act like it’s a bathing suit top like one individual did in front of me today. Then, definitely don’t start throwing a football around or riding a bike in circles. And, yes, she did.

233. Salad Monday, Week Dos

This morning, I could have used a coffee.


But then I remembered it was Salad Monday! Hence, my excitement when it came time to order lunch at Panera Bread (it’s the little things). Since I can’t read anything unless it’s three inches away from my face, I got to the counter with no knowledge of which salad to order. So, I went for the first one I could finally see on the menu – the Fuji Apple Chicken Salad. Granted, they forgot the gorgonzola cheese but that was probably better since I’m trying to cut out cheese from my diet (on the weekdays at least, who can resist late weekend night pizza?). The salad included romaine lettuce, spring mix with baby spinach, pecan pieces, dried apples, onion, tomatoes, citrus & pepper chicken, and white balsamic fuji apple vinaigrette. Here’s a visual:
