This week’s Salad Monday is brought to you by brussels sprouts. Yes, technically, this is more of a rice bowl. But, it is a bowl of “greens” so I’ll count it. In fact, it’s tossed with a low-calorie Balsamic Balsamic Vinaigrette (which is technically a salad dressing) so I think I can officially call it a warm salad. Hurray! Want the recipe? Here ya go:
*Note to self: Just found out there’s an “s” at the end of the word “brussels.” What else don’t I know about the spelling of vegetables? Is “raspberry” really not spelled with a “p”?
